Filippo will explain the different truffles that grow across the four seasons and how the centuries-old practice of hunting with a dog works. Ask him anything. Once a dog has found its mark, you're welcome to dig out the truffle yourself, or step back and let the hunter do the work while you watch and learn.
Back from the woods, your sommelier guides you through a four-course menu built around the morning's find, with each dish paired with its own wine:
Cured meats, local sheep's cheeses, and bruschetta with truffles and tomatoes: paired with a rosé or white
Eggs and truffles: paired with a red
Fresh egg pasta with truffles: paired with a red
Dessert of cantucci and vino santo
The wines and the dishes are timed together, so the meal unfolds slowly, with the Chianti hills in view from your table.
Experience Details:
We’ll set out from the borgo at 10:30 am to begin our experience at 11:00. We will finish lunch around 2:30 PM, and may have the opportunity to stop for a wine tasting on the way back to the borgo.
